Carnitas
Talk about authenticity! These pork carnitas are juicy and crispy, to perfection. Their versatility as a filler is amazing. You can add them to tacos, torta sandwiches, burritos, bolillos, tostadas – the possibilities are endless!

INGREDIENTS
- 4 lb pork legs, cubed to desired size
- 1 onion
- 2 cloves garlic
- 2 bay leaves
- 3 tablespoons oil
- 4 oranges (the juice)
- Salt to taste
Preparation
- Place the cubed meat in a pot and cover with water.
- Add the onion, garlic, bay leaves, and salt. Bring to a boil over high heat, reduce the heat and cover. Cook for approximately 45 minutes, or until the meat is well cooked but firm.
- Discard the broth with the onion, garlic, and bay leaves. Add the oil to the pot with the meat and fry, stirring constantly until golden. Add the orange juice and cook until most of the juice has evaporated.
