Mole Poblano with Doña María Sauce

INGREDIENTS

  • 2 boneless chicken breasts
  • 1/2 medium onion
  • 2 garlic cloves, minced
  • 2 tsp salt
  • 1 jar DOÑA MARIA® Mole Original (8.25 oz)
  • 1 - 1/2 cup of chicken broth
  • 1/8 tsp ground cumin
  • 4 tbs of creamy peanut butter
  • 2 tbs corn oil
  • 2 cups of white rice
  • 1/4 tsp ground cinnamon

Preparation

  1. Steam your white rice before getting started.
  2. In a large skillet, cook chicken, chopped onions, and garlic for 10 to 12 minutes or until chicken is cooked through and onions are soft.
  3. In a large bowl, combine chicken broth and mole sauce. Add in peanut butter, cumin, ground cinnamon and stir until fully combined.
  4. Cover chicken with mole mixture, bring to a boil, reduce heat to medium-low and simmer 15 minutes.
  5. Serve over rice.
